Mung korn lui fai (Flambéed Phuket lobster served with sweet red curry sauce)
Ingredients:
1. Phuket Lobster
2. Red curry
3. Coconut milk
4. Fish sauce
5. Palm sugar
6. Bread flour
7. Kaffir lime leaf
8. Red chili
Method:
1. Rinse lobster with fresh water
2. Separate lobster meat from the shell
3. Mix lobster meat & shell with bread flour.
4. Deep fry then put them back together on a dish
5. Stir fry red curry with vegetable oil with coconut milk, fish sauce and palm sugar
Serving:
1. Flambee the lobster with sweet liquor
2. Pour red curry sauce on top
3. Garnish with kaffir lime leaves and red chilis
